Lark Distillery offers you the exciting experience  of maturing your very own 20 litre barrel of premium Lark Single Malt Whisky at home.

Purchasers get to "play" at being a distiller and design their whisky, by choosing the type of oak (usually either French oak sherry, French oak port or American oak bourbon, subject o availability), as well deciding the level of peating of the barley.  Furthermore, purchasers also get hands on as they prime their new barrel at home ready to be filled with 20 litres of Lark's rich, malty, honey sweet new make spirit at 63.4%a/v.

Due to the high surface area to volume ratio of a small 20 litre barrel, the whisky will actually be ready in 2 to 2-1/2 years.  We highly recommend sampling the spirit often as it matures! Indeed half the fun is in the experience of watching your spirit improve with age and savouring the transformation and development into a whisky.. It should also be noted that the resultant spirit will be at cask strength (around 58%) and the owner can cut the whisky down to the desired alcohol strength if they so choose.

Lark Distillery also has available for purchase to mature at home 20 litre barrels of Lark's Aged Rum; "Rum Island Reserve".  Made from Queensland black strap molasses, the mature spirit is a dreamy mellow rum with notes of vanilla and toffee, well worth the wait.  This is an excellent opportunity for rum enthusiasts and clubs to experience the transition of a white rum spirit into the stunning matured spirit (again, frequent sampling is a must!). You may also purchase your own 20L barrel of Calvados style Apple Brandy to mature yourself, made from Huon Valley Sturmer Pippins. Lark Distillery also currently has available 20L barrels of brandy spirit, distilled from premium Tasmanian wine.
