The Lark Distillery Apple Schnapps is produced from a carefully prepared apple cider produced from Huon Valley cider apples grown in the heart of Tasmania’s cool climate orchard country. We take delivery of the cider and double distill the spirit in our 500 litre copper pot still. The beauty of copper pot stills is that they produce a delightfully soft spirit. The heart of the spirit is cut when the average strength is approx 40%a/v and retains the delightful fresh crisp flavour of the Huon cider apples.

Apple flavour is hard to retain during the distillation process as they are not very “oily”, but by choosing the cider apple we have managed to retain the essential apple flavour without the need to add any artificial flavours or essences. The sparkling, crystal clear pure apple schnapps is left at 40%a/v.

Nose:

Combines subtle aromas of cider apples on a bed of dewy new apple leaves.

Taste:

Initially dry with just a hint of sweetness, crisp, fresh, and clean, highlighting the sharpness of an old fashioned cider.

Finish:

As it starts, with the rich character of a fresh compote of baked apples, rich and to the point.
