Having become well known for our unique Bush Liqueur using the Native Pepperberry, the Lark Distillery decided to make a Tasmanian Gin
Pepperberry Gin
Lark Pepperberry Gin is a traditional gin made by distilling a neutral spirit over a number of botanicals including the Juniper Berry. We have added the pepperberry to the usual range of botanicals. The pepperberry is such a wonderful berry in that its characteristics appear in the gin, complementing the juniper rather than dominating the spirit.
The native Tasmanian pepperberries are collected from the Tasmanian wilderness, crushed, and steeped in strong neutral spirit, then twice distilled in our copper pot still. The process is similar to that of producing a London Gin.
Nose:
Highly aromatic perfume,
fresh grated pepper on a floral bed of herbs and spices.
Taste:
Rose petals and spicy
juniper, citrus and aniseed, exiting complex
Finish:
Lemon peel dryness,
warming to slightly sweet lingering note of complimentary herbs and
spices.
