About Us
The creation of a single malt whisky is a wonderful combination of science, art and passion and Bill and Lyn Lark have dedicated the last decade of their lives doing this. With a focus on producing a high quality single malt whisky, which Tasmanians could call their own, and one that could be enjoyed by whisky enthusiasts the world over, the realisation of this dream has been a family affair. Kristy the Lark’s daughter, as soon as she was old enough, wanted in on the passion of the business and she has gained recognition as arguably the world’s youngest female distiller. Impressed by her results, the International Institute of Brewers and Distillers awarded Kristy a scholarship to visit Scotland, where she had the opportunity to be influenced by the whisky greats of the industry. Production has increased exponentially from the home cellar to the present cellar door premises and whisky bar on the waterfront in Hobart’s picturesque Sullivans Cove. The Lark Distillery products are available directly from the whisky bar and distillery or from a range of restaurants and bottle shops throughout Tasmania and Australia. Click here to find out where.
